Brown Rice with Dried Fruit, Seeds, and Nuts

Serves 6 Serving Size: 1 cup

This recipe is a great way to use freshly cooked rice. It requires no additional cooking and is perfect served over a bed of greens or as a side to any meat or seafood protein. The Lemon-Miso Dressing with a hint of hot sriracha gives the dish a nice spicy kick without overwhelming the palate. Pickled ginger is used to garnish the rice, refreshing the palate with every spoonful. This recipe is rich with nutrients because all ingredients are raw with the exception of the rice. Tip: To “shave” broccoli florets, thinly slice the head of each stalk.

3 cup cooked Basic Brown Rice (“Sushi”)

1/2 cup dried tart cherries

1/2 hothouse cucumber, peeled (optional) and diced

1/4 cup raw sunflower seeds

1/2 cup raw crushed walnuts

1 cup shaved broccoli florets, (3 stalks)

1/3 cup tightly packed fresh mint leaves, chopped

1/3 cup Lemon-Miso Dressing

1 sprig mint, leaves only

1. In a large bowl, toss together the rice, cherries, cucumber, sunflower seeds, walnuts, broccoli, and mint. Add the dressing and toss to distribute evenly.

2. Serve at room temperature, garnished with whole mint leaves.
